Defining Cafe Rio

For those of you who don't know, Cafe Rio is a local Mexican Grill along the lines of Chipotle or Barbacoa. Unlike more traditional Mexican fare, Cafe Rio food is notable for its fresh, bright flavors.

Anyway. I parked in the Cafe Rio parking lot yesterday, so I have Cafe Rio on the brain, including this observation: females (especially young ones) ADORE Cafe Rio, especially the salads with tomatillo dressing on the side. But I have to say I have never met a guy who would make Cafe Rio his first choice. Dude. Where are the refried beans swimming in melted cheese and manteca?

Still, they go. They go a lot with girlfriends and sisters and sometimes even moms, thus making Cafe Rio the perfect restaurant for women and the men who love them.

Am I wrong about this?

My husband wouldn't choose Cafe Rio, but he'll go there if I want to go. Mmm, creamy tomatillo. Ahhhhh....

Those are 1500 calorie salads. Might just as well have refried beans. I sound like Eeyore. Somebody has to do it.

I love how women think that humungo 1,500-calorie salad with be healthier with the dressing on the side. Oh, and make sure you pronounce it Utah-style: "tome-ah-til-o." :) Men could always do what my brother does: burrito with extra meat, super-duper enchilada style. Now THAT'S man food.

Cafe Rio is my husband's favorite eating establishment, hands down. He doesn't even seem to care that it's all girl food. (Do you think that's related to the fact that he drives a MINI Cooper? Everyone else who drives one seems to be female.)

My little brother makes it his first choice occasionally... I do love it there myself although I typically go for tacos on tuesdays because they are 1.50 a taco on tuesday nights in logan.

I've been hearing about Cafe Rio for years and Jane took me there over spring break when we were in St. George. It was a little slice of heaven I must say!

You failed to mention that often husbands go with wives. I actually get the salad when I go (usually). But definitely never would be my first choice.

Also, I have a recipe for the tomatillo dressing if you want it...

Okay, ladies (mostly Louise),
You scared me to death with all your 1500-calories-in-a-Cafe Rio-salad talk. PLEASE NO is what I said out loud when I read Louise's post, scaring my daughter-in-law who walked in the room at that very moment. And I am not a calorie counter . . . until now, when death is on the line.

The pork salad w/ house dressing (and I know you want to know this) has only 800 calories. If you get the chicken salad, it has 275 calories less.

Redemption.

It was my calorie-counting nutritionist who told me it was 1500 calories. How do YOU know so much Cheri?

I wish I would have read this post BEFORE eating at Cafe Rio today - BUT I did divide the salad into 2 meals - lunch AND dinner. Does that still add up to 1500 calories? Oh, I also ordered the tres leche cake, but I did share it with friends. Delicious as it is, now that I know how it all adds up, I'm afraid the fare is just too sinful. Sigh.
